Ideal Fridge and Freezer Temperature, and What to Do When Yours Is Off

Set your fridge to 4 degrees Celsius (40 F) or lower and your freezer to -18 degrees Celsius (0 F) or lower. Those are the numbers Health Canada publishes for safe food storage. If your appliance cannot hold them, the problem is mechanical, not a dial setting, and it is worth getting looked at before food starts spoiling.

Why the exact numbers matter

Bacteria multiply fastest between 4 and 60 degrees Celsius. A fridge sitting at 7 or 8 degrees looks fine, feels cold to your hand, and is still inside the range where food goes off far quicker than it should. That is the whole reason the guidance is a number rather than a feeling.

The freezer figure works the same way. At -18 degrees, food stops degrading in any meaningful way. At -10 it slowly does, which is why people notice freezer burn and mushy texture long before anything looks obviously wrong.

How to actually check it

The digital display on the door is a target, not a reading. Plenty of the units we see in Hamilton kitchens are showing 4 while the shelf is sitting at 8. Do this instead:

  1. Put a glass of water in the middle of the fridge, leave it overnight, then put a thermometer in the water. Air temperature swings every time the door opens. Water does not.
  2. For the freezer, slide a thermometer between two frozen packages and read it after a few hours.
  3. Take the reading in the morning before anyone has opened the door.

If the fridge lands between 2 and 4 degrees and the freezer at -18 or below, you are fine. Anything warmer, and it is worth reading on.

What is usually wrong when it will not hold temperature

  • Door seals. Close the door on a piece of paper and pull. If it slides out with no resistance, the gasket is done. This is the cheapest thing on the list and the most commonly ignored.
  • Condenser coils packed with dust. Pets in the house makes this happen faster. The compressor runs longer and longer and eventually cannot keep up on a hot day.
  • A failed evaporator fan. Usually announces itself with a warm fridge, a cold freezer and a whirring or clicking noise from the back.
  • Iced-up evaporator from a defrost fault. A bad defrost heater, thermostat or control board lets frost build into a wall of ice, and airflow stops.
  • Overpacking. Air has to circulate. A fridge crammed to the back wall will have warm pockets no matter how healthy the compressor is.

When to stop troubleshooting and call someone

Clean the coils, check the seals and give it 24 hours. If it still will not hold 4 degrees, or if the freezer is running warmer than -12, book it. A fridge that runs constantly and never reaches temperature is burning electricity and heading for a compressor failure, which is the expensive end of the problem.
